Who wants a rich and creamy dessert? I do! Especially when I know that what I’m eating is good for me! I’m all about indulging without bulging 😉
I just saved us from a lot of fat calories by not using heavy whip cream in this (vegan) dessert! The creamy texture is the result of chia seeds soaked in light coconut milk, which makes this dessert high in omega 3 and dietary fiber and low in calories.
When I first poured the light coconut milk in a bowl I wasn’t sure how this was going to become a pudding because it’s so much thinner than regular coconut milk. But to my surprise (after an hour) the seeds absorbed a lot of the milk and it changed the consistency completely.
I layered the pudding with banana and coconut shredding but you can pick any fruit you like. I’m thinking of trying raspberries next!
- 1 can light coconut milk
- 1/3 cup chia seeds
- 2 tbsp agave
- 1 tsp vanilla extract
- 1 large banana
- 4 tbsp unsweetened coconut flakes
- In a bowl, stir in the coconut milk, chia seeds, agave and vanilla extract.
- Refrigerate for an hour.
- Take four small cups and start with a layer pudding, then add a layer of sliced banana + coconut flakes, and repeat twice.
- Top with anything you like; crushed nuts, other fruits or some cacao!
