Are you ready for the weekend? I certainly am! I’m finishing up work and getting the guesthouse ready for my dad and his lovely girlfriend. They’re flying in from Holland and it’ll be their first time in Miami. I’m so excited, I only get to see my family once or twice a year; needless to say I’m going to spoil them this weekend with yummy food and ice cold drinks!
What are you doing this weekend? Is the sun shining were you live? Let’s make some tasty fish tacos! This recipes is quick and easy and you’ll be eating it with raw veggies infused with refreshing lime.
- ½ tbs jalapeño pepper
- 1½ tbs yellow union
- ½ cup cucumber
- ½ cup green bell pepper
- 1 cup red cabbage
- ½ lime
- 2-3 grouper fillet
- 4 corn taco shells
- 1 avocado
- salt & pepper
- Finely chop the jalapeño pepper, yellow union, cucumber, green bell pepper and red cabbage. Transfer to a bowl and mix in the limejuice. Add a tiny bit salt and stir well. Set aside.
- Heat olive oil in a large skillet over high heat ands season with salt and pepper. Place grouper fillets in the skillet and cook, until cooked through and flaky; about 4 minutes on each side.
- Cut the fish in pieces and fill up the taco shell with fish and salad.
- Add a few slices of avocado, garnish with a bit cilantro & enjoy your weekend!
