This might look like just another yummy salad BUT this is the most labor intense and special salad I’ve made. Why? Because I planted the seeds myself, religiously watered them, and took care of these babies for two months. They were almost ready to be harvested and then… torrential rain hit Miami and my babies were literally drowning :(. Oh no! I quickly pulled them out with roots and all, rinsed them with water, and cleaned every leaf with a lot of love and respect. I made a delicious spinach, caprese salad (tomato, mozzarella +basil) and ate this salad with more awareness and appreciation than ever before. I’m thrilled that I saved them from drowning and that the purpose of their existence is fulfilled; nourishing my body!
Yes… I totally realize that I found my inner nerd 😉 I love it!! LOL
